most recent post, Brazil's nascent flor de sal industry is centered on the northeastern Brazilian state of Rio Grande do Norte.
The state is blessed with the right climatic conditions for the formation of flor de sal crystals, as there is plenty of scorching sun and hot, drying winds. These conditions foster the growth of the salt crystals, but they also make for difficult and trying work. In intense heat and wind, workers harvest the delicate crystals from the surface of pools of hot brine. Flor de sal is a heavenly product that is produced in hellish conditions.
